Experience refined luxury at GAIA Grill Reserve, the newest addition to the The Tins Group nestled in the heart of Eco Galleria, Iskandar Puteri, Johor. The name GAIA – a personification of Mother Earth in Greek mythology was chosen to represent the abundance of ingredients used at their restaurant and grill.
Crafted in 1979 by the esteemed Master Blender Maurice Fillioux, Hennessy Paradis is celebrated for its graceful and silken allure. Conceived by the renowned Italian designer Ferrucio Laviani, this sleek masterpiece serves as the muse for a captivating campaign that unfurls in suspended bliss.
Under the meticulous orchestration of Chef-owner Justin Christopher Yap, the debut of GAIA becomes a canvas for a culinary collaboration that transcends the ordinary.
The dinner starts off with a delectable appetiser of Senrei Caviar Cornette featuring Senrei Scallop Sashimi topped with Beluga Caviar. This was then succeeded by a velvety North Atlantic Hokkigai Clam Chowder, complemented by the savoury delights of Gaia’s Garden Grill for an assortment of vegetables.
But in the tapestry of delightful dishes that graced the evening, one particular dish was the most notable of them all – The Foie Gras Pero Salsa, featuring Rougie Goose Liver, Heirloom Tomatoes, Smoked Ancho Pepper, and Yuzu Kosho, emerged as the epitome of culinary artistry. Distinguished by the subtle heat of the Smoked Ancho Pepper, which unveiled a rich smokiness, and enhanced by the citrus notes of Yuzu Kosho, this dish became a harmonious composition that elevated the velvety texture of the Foie Gras. This culinary masterpiece found its perfect partner in the sophisticated Hennessy Paradis, a union that transcended the mere pairing to become a sublime experience.
The meal resumed with a main of premium Australian Wagyu Wellington 58.5 crafted with Champignon Duxelle, Veal Bacon, a Spinach Coat, and French Butter Puff Pastry. The marriage of flavours was nothing short of a symphony, where each element danced on the taste buds with grace and finesse. As for the sweet finale, a rich and velvety Praline Noir Chocolate Indulgence with a sprinkling of Fleur de Sel was served creating the perfect union of flavours while Hennessy Paradis is left lingering in our aftertastes.
The dinner was also commenced with a captivating performance by lovely duo Janet Lee and Grace Leong on the grand piano.
