With over 30 years of global experience, chef Enzo has left his mark on the world’s culinary landscape, from Europe to Asia and the Middle East, blending tradition with innovation to create memorable dining experiences.
Carbone’s love for cooking stems from his Italian upbringing, where the kitchen was the heart of the home. “I was inspired by my mamma and older sister, who were the heart of our kitchen growing up. Their passion for cooking and creating beautiful meals motivated me to pursue this path and share my love for food with others,” he recalls. This early exposure sparked his lifelong passion, which has taken him to some of the world’s other vibrant culinary capitals, including Shanghai, Istanbul, and Hong Kong, where he created renowned restaurants such as CAPO and 208 Duecento Otto.
With extensive international experience across Italy, Switzerland, South Korea, China, and beyond, chef Enzo’s culinary philosophy is shaped by a blend of global influences. “Each place I’ve worked has had a profound impact, not just on my culinary approach but on my cultural perspective as well,” he explains. His ability to incorporate local flavours while maintaining the authenticity of Italian cuisine is what makes his dishes so unique. Whether it’s the rich flavours of the Mediterranean or the bold spices of Asia, Carbone’s menus are a celebration of culinary diversity.
At Hyatt Centric City Centre Kuala Lumpur, chef Enzo will helm IL Forno, a traditional Italian trattoria that will serve hand-crafted pastas and Neapolitan pizzas in a family-style setting. “This project is especially unique to me,” he notes. “Guests can expect authentic regional Italian cuisine, served in a warm, family-style setting that feels both comforting and exciting.” The 21-storey luxury hotel, designed by Silverfox Studios, is perfectly situated in the heart of Kuala Lumpur, near the iconic KLCC Twin Towers. It aims to attract urban explorers with its modern design and three unique dining concepts, including IL Forno, TanBuri, a tandoori-style donburi restaurant, and @21, a rooftop pool bar with signature cocktails.
Known for his creativity and culinary innovation, Carbone finds inspiration in people and the connections that food creates. “It’s always about trying to bring a piece of myself to the table with each dish,” he explains. His attention to detail and passion for crafting meaningful dining experiences are reflected not just in the food but in every aspect of IL Forno. Together with Davide Brescianini, the director of food & beverage operations, Carbone is dedicated to delivering a dining experience that is as memorable as it is delicious.
After receiving numerous accolades throughout his career, including the “Ambassador of the Culinary Arts Award” from Premio Guido Alciati Turin, chef Enzo’s focus has shifted towards building lasting legacies. “At this point in my career, it’s no longer about me – it’s about our team and our guests,” he says. His goal for IL Forno is for it to be recognised as one of the best authentic Italian trattorias in Malaysia, drawing both locals and international travellers. “We’re committed to delivering not just exceptional food, but also an unforgettable service experience,” he adds.
With a wealth of experience in developing restaurants from inception to international acclaim, his career has been defined by his ability to create successful dining ventures. His previous restaurants, such as “The Kitchen” in Shanghai, received top accolades, and under his leadership, his establishments have garnered multiple Best Restaurant awards. Now, with Hyatt Centric City Centre Kuala Lumpur, chef Enzo is ready to offer guests a taste of his unique culinary vision, blending his Italian heritage with the cultural vibrancy of Kuala Lumpur.
