Each with decades of experience in Michelin-starred kitchens and luxury hotels across the globe, and known for their creativity in their respective fields, Chef Stig Drageide and Chef Holger Deh will be serving up exciting new dining delights in The Living Room and The Dining Room, the Park Hyatt’s signature dining concept venues.
Chef Stig Drageide is a culinary artist hailing from Norway with more than 20 years of experience, including tenures in Michelin-starred restaurants Oro and Bagatelle in Norway as well as several stints in hospitality kitchens in Shenzhen, Tokyo and Singapore – always bringing beautifully crafted dishes to the table.
In the Park Hyatt Kuala Lumpur, he aims to deliver extraordinary dining experiences that honour his Nordic roots and introduce the versatility of plant-based options to KL.
“Culinary art is more than just taste – it is about creating moments of joy and connection. My passion lies in transforming simple ingredients into beautiful dishes that tell a story and leave a lasting impression. We are excited to introduce our plant-based options, which will be a game changer in Kuala Lumpur’s vibrant dining scene. Our goal is to create delicious and visually stunning dishes that highlight the versatility of plant-based ingredients while catering to the growing demand for plant-based cuisines,” said Chef Stig about his upcoming tenure.
Alongside him is Chef Holger Deh as Executive Pastry Chef, who will be taking the lead on the pastry and dessert front. With a robust resume of working experience in several continents as well as in Michelin-starred restaurants Tristán in Spain and Haerlin in Germany, Chef Holger’s flair with desserts is sure to bring delight to future guests at the Park Hyatt.
He aims to creating memorable experiences and also promote a sustainable and nurturing environment for the culinary arts wherever he works.
“I am privileged to blend the rich culinary heritage of Malaysia with international influences, creating pastries that resonate with both local flavours and global palates. It is about celebrating diversity on the plate while crafting experiences that reflect the essence of luxury and hospitality,” Chef Holger said. “The Signature Afternoon Tea experience is not just about flavours and presentation; it is about crafting a moment of indulgence and sophistication that guests will cherish.”
Chef Stig and Chef Holger were previously featured in the Grand Hyatt Kuala Lumpur’s #DineWithChef series in May, where they gave a sneak peek of their talents and the dishes they’ve been developing for the Park Hyatt Kuala Lumpur.
