To commemorate the month of Ramadan, the highlight of the buffet is the Gulai Assam Rong-style Claypot Roasted Duck, which is a traditional village dish originally from Pahang. This classic delicacy features tender duck simmered with unique ingredients like pea eggplant, tapioca leaves, lady’s finger, rare seasonal perah fruit, and rubber seed.
Also a must-try is the Rendang Minang Smoked Barbecue Beef Ribs that’s infused with authentic Malay spices and served with roasted root vegetables and sauces.
Additionally, the Xinjiang Whole Lamb with Bukhari Biryani Rice is also a highlight of the spread. A whole lamb, marinated with cumin, Szechuan peppercorn, and Chinese spices is roasted to perfection. It is served with fragrant Bukhari biryani rice, tomato and cucumber salad, mint raita, mint coriander, and rosemary sauce to create a fusion of Chinese-Indian flavours.
If you prefer something Western, then opt for the Baked Honey-glazed Chicken. The poultry is marinated for 12 hours before the baking process and is served with Executive Chef Rudy Junaidie’s signature plum sauce.
