Things are starting to look up in the global F&B scene post-lockdowns due to COVID-19. The tough times have forged tougher businesses, resulting in novel ideas and innovative trends that are drawing in customers again.
For Noma, four-time topper in the World’s 50 Best Restaurants list, this “new norm” sees it reopening as a wine and burger bar starting May 21.
To provide context, the 2-Michelin star Danish restaurant was previously known for inventive, seasonal dishes such as raw Danish shrimp with cured bleak roe, hip berries and horseradish cream; and Mexican oregano leaf filled with reindeer brain, forest herbs and Morita chilli, to name a few.
In stark contrast, the new, limited menu offer two burgers: a cheeseburger and veggie burger. A selection of wines are also available by the glass or bottle from their wine bar.
The Danish restaurant’s co-owner, René Redzepi wrote on Instagram: “Copenhagen is about to reopen its restaurants. And so will Noma. However before we reopen Noma as we know it. We will transform into a no reservation, drop-in only, wine and burger bar.
“We feel in the first phase of the reopening that we want to be open for all. We need to heal, so let’s have a glass and a burger, you’re all invited,” he continues in the caption.
What’s more, customers can now drop in without a reservation – which likely would have set you back on a long waiting list in the old Noma. Since its reopening, customers have been steadily pouring into the restaurant’s spacious outdoor garden overlooking a lake in the Christiana neighbourhood of Copenhagen.

“Being closed for so long means that it will take weeks for our team to get the kitchen back to the levels we were at before closing. We do not yet have an official opening date for the restaurant to share, but we will have more information on this very soon,” the website reads.
