It is the first of four experiential cocktails and tapas events to take you on a gastronomical journey with a dose of sensorial experimentation.
What do you get when the oldest of the great cognac houses, House of Martell, joins hands with Japas ‘fun’ dining restaurant, Babe by Michelin starred Chef Jeff Ramsey? A rabbit hole, of course! But, The Wonderarium is a delightful one that celebrates the spirit of experimentation.
The Wonderarium is a series which will take you through tastes that are truly disruptive in a journey of gastronomical pleasure. It will be four experiential cocktails and tapas socials centred around interactive sensorial experimentation. Expect variations of flavour and taste in a way you have never experienced before through a journey of cocktails and canapes.
The very first of The Wonderarium events will allow you to experience Umami & Smoke flavours on 14 and 15 June at Babe. Join in the event with an open mind and expect the unexpected as you experience the two flavours in ways you never did before.
At the height of the evening, Chef Jeff Ramsey will personally invite small groups of guests to his curious little station. He will navigate the guests through a series of mind-opening, interactive sensorial gastronomy experiments. Tastebuds would be teased with familiar flavours in a way you would never expect, all making for an unforgettable event.
Without giving away too much, here’s our take on the three cocktails of the soiree.
Rakkasei Highball - Martell VSOP Aged in Red Barrels, Peanut Orgeat, Sour Plum Shochu, Brown Rice Vinegar
It is sour with strong notes of the vinegar and sour plum shochu which hides the alcoholic taste of the drink. Before you know it, you would have drained the drink as you start feeling the heat from the cognac.
Smokey Daisey - Martell VSOP Aged in Red Barrels, Mezcal Marca Negra, Roselle, Gula Melaka, Cranberry
A reminiscent of molten glazed bacon, there is a strong hint of smoke accompanied by a good dose of sweetness from the roselle, gula melaka and cranberry.
Otonano Haru Cha - Martell VSOP Aged in Red Barrels, Monkey 47 Gin, Hojicha, Rosemary Honey, Lavender Tea Syrup
Topped with glistening hojicha foam, this cocktail is truly unique. It is sweet and is perfumed from the honey and lavender tea syrup.

The first of The Wonderarium cocktail socials is on 14 and 15 June, priced at RM280++ per person. Upcoming instalments of The Wonderarium will feature Babe’s collaboration with Osmund Bernard of Kenshin Bar. It is expected to happen on 6 and 7 September 2019.
