Washoku (和食) noun
- Japanese food, highlighted in the second season of Chef on Chef through four chefs in four Malaysian restaurants.
Of the world’s cuisines, few evoke intrigue and respect like that of Japan.
Chef on Chef returns this time with the spotlight on this delicate culinary craft from the Land of the Rising Sun, that places integral weight on raw seafood, fresh produce and generational techniques perfected by intuition of the chef for the ingredients of the seasons.
After hosting Chef Makoto Saito of Hibiki in the previous episode, Chef Jun Wong from Kikubari pops by Hanaya in Grand Millennium KL, one of the longest standing Japanese establishments in the city.
She is introduced to Chef Hironari Ooba, whose specialty in traditional Japanese fare is highlighted with meticulous plating and story-telling presentation made dinner a proper show and tell. Each sushi he crafts is given due thought, right down to how hard he presses his sushi rice together.
As much as he sticks to tradition, Chef Ooba wasn’t afraid to break convention either when it came time to whip up something to pair with Martell cognac.
