Multi-sensory experiences across four venues

The festivities begin at Yan Ting, where Executive Chinese Chef Chan Chung Shing partners with Chef Daniel Wong of the Michelin-starred Jin Xuan in Shanghai for a four-hands imperial banquet. Diners can expect masterfully executed classics such as Shunde-style crispy gold-coin crab cake and a white pepper chicken soup double-boiled with pork tripe and fish maw.
The following day, the duo will present an indulgent dim sum brunch that features refined bites like Phoenix Tail Prawn Toast topped with caviar, alongside simmered Thai pomelo skin with shrimp mousse.

Over at The Tea Room, Head Pastry Chef Andrea Bonaffini brings a playful local twist to the classic afternoon tea ritual. Served in a garden-inspired setting, the experience pays homage to Singaporean flavours with delights such as buah keluak scones, mango pearls in rojak-style kueh pie tee, and coconut macarons filled with rich gula Melaka ganache. Each element tells a story of nostalgia, reinterpreted with a contemporary pastry flair.

Evenings take on a spirited note at The St. Regis Bar, which hosts a three-night bar takeover featuring guest bartenders from Asia’s 50 Best Bars.
Joining hands with the hotel’s resident mixologists, Paulo Naranjo of The St. Regis Jakarta and Marco Dognini of The St. Regis Bar at W Bangkok will present a rotating menu of cocktails inspired by heritage ingredients, forgotten techniques, and modern flair. Expect bold, layered flavours with inventive presentations that speak to each bartender’s unique philosophy.

At The Astor Grill, the culinary action continues with a six-hands Italian-Portuguese fusion dinner. Executive Chef Fabio Granata teams up with Chef Vladmir Veiga from W Algarve and Chef Angelo Sergio of JW Marriott Hotel Singapore South Beach for a dynamic collaboration.
Signature plates include Carabineiro prawns with veal sweetbreads and cod trippette with white-corn polenta – a marriage of coastal elegance and earthy richness.
On Sunday, the same venue transforms into a laid-back brunch destination, serving up lobster rice, champagne sabrage, and live jazz, rounding off the weekend on a festive high note.
