Kokuryu Daiginjo Ryu Sake
Sake has been slowly gaining popularity as the drink of choice for many, and not just to pair with a Japanese meal. This sake from Kokuryu comes from a long tradition of sake brewing, hand-crafting only the best in small batches.
Kokuryu was founded in 1804 in the mountains of Fukui, an ancient land nestled between the snowy peaks of the Hakusan mountains. Pure water from these mountains are also the main ingredient for the clear, mellow flavour of their sakes. It starts as snow on the high reaches of the mountains, percolating slowly through rocky layers before becoming the subterranean flow of the Kuzuryu (the River of the Nine-Headed Dragon). Every drop is filtered by nature. The premium rice used is also one of the highest grades of sake rice – the prized Yamadanishiki from Hyogo prefecture’s Tojo region and Fukui’s Gohyakumangoku rice.
Finally, it is the application of wine maturation that was applied to sake by Kokuryu’s chairman Masato Mizuno, after he had learnt about it in France in 1975. At the time, this sake was the most expensive sake in Japan, and the first in the industry to use the now-common grade of ‘Daiginjo’. A sake with good balance and delicate profiles is needed to ensure that it does not overpower the food that goes with the drink. It is to compliment the meal, not overshadow it.
This has resulted in a fruity and soft sake with notes of apple, peach, melon and strawberry. Best enjoyed cold, it is mildly dry and crisp, with pleasant acidity and umami.
